Allergen test kit is used to test any unusual reactions of the immune system towards our body caused by any food. The most common allergy causing food are soy, peanut, mustard, egg, crustacea, coconut, gliadin, gluten, hazelnut, almond, milk, sesame, gluten and treenut. There is no cure for food allergy. The best way to manage the condition is to avoid the allergenic food.
The symptoms can range from mild to severe and affect any part of our body at a time. The allergy symptoms such as swelling of the lips, hives and shortness of the breath typically occurs within 30 minutes after exposure. The most severe kind of reaction is called anaphylaxis, which can cause a sudden drop in blood pressure, trouble breathing, dizziness and possibly death.
Food allergen testing was required as a law created by FAO and WHO to develop food standards, guidelines, codes of practice, etc. to protect the health of consumers, ensure fair trade practices in the food trade, and promote coordination of all food standards work undertaken by international governmental and non-governmental organizations.
Due to the advancement of technology, food allergen test technology nowadays are tested via The Enzyme-Linked Immunosorbent Assay (ELISA) method. It is the most common and preferred technique in detecting food allergens. ELISA method detects the allergen protein molecule by binding antibodies to the allergen. The samples are processed and change in color confirms the presence of the allergen protein. Lateral Flow Devices (LFD), also known as immunochromatographic assays, are usually available in strip or dipstick format and generally provide qualitative results. When the sample is applied to the strip, it mixes with a colored reagent and moves by capillary action along the strip into specific zones that contains the allergen-specific antibody. If the allergen is present, it will bind to the antibody, and a visible line will form.
